A Broccoli Salad Recipe That Is Easy, Delicious and Nutritious




This broccoli salad recipe is low fat and delicious. You could add this dish to your special holiday table or serve it every day. It's simple to prepare yet a beautiful addition to a special-occasion feast.

First I'll give you the recipe, then I'll give you some nutrition facts about this wonderfully nutritious vegetable.


Broccoli Vinaigrette

Fresh Broccoli Ingredients:
  • 1 large bunch broccoli
  • 1/4 cup seasoned rice vinegar
  • 1 tablespoon Dr. Fuhrman's VegiZest (I used Frontier's All-Purpose Seasoning because I didn't have any of Dr. Fuhrman's seasoning.)
  • 2 teaspoons Dijon mustard
  • 1 large cloves garlic, minced

Directions:

  • Chop broccoli into bite-sized florets. Peel stems and slice them into 1/4"-thick strips.
  • Steam florets and stems for 8 minutes or until just tender. (Check on this, as it's easy to cook too long and the broccoli will get mushy.)
  • While the broccoli is steaming, whisk remaining ingredients in large bowl.
  • Add broccoli and toss.
You can eat this warm or keep cool in the refrigerator until it's time to serve your meal.

This broccoli salad recipe serves two and provides the following:

  • Calories - 110.7
  • Protein - 7.6 g
  • Carbohydrate - 19 g
  • Fat - 0.9 g
  • Sodium - 216.9 mg

This tasty recipe comes from Eat for Health, Book Two - the body makeover by Joel Fuhrman, MD. He has created a nutritional scoring system called MANDI. It rates foods and recipes based on their nutritional density. He writes that a daily intake of 100 points represents the ideal diet.

The broccoli vinaigrette recipe in his book scores 13. Not bad for a side dish at one meal.
