The Rave Diet


Looking for a dinner recipe that is quick and easy, will satisfy your hungry family, and is loaded with good vegetarian nutrition?

Most of the country is freezing! And that includes western North Carolina. I wanted something scrumptious and warming to eat today, yet easy to prepare.

I checked The Rave Diet book and found that I had all of the ingredients I needed to prepare the following dinner recipe and decided it would be a good thing to do on this very cold January day and report back to my readers.

I don’t usually like to use a lot of canned foods, but I’m glad I had a few of these items on hand. With a fresh green salad, this makes a great family dinner. Give it a try:

Pie – Tamale

  • 1 can kidney beans, rinsed and drained (I didn’t have kidney beans so used navy beans, a 15-ounce can)
  • 1 can corn (15-ounce)
  • 1 can sliced or whole black olives (I coarsely chopped them)
  • 1 chopped onion (medium size. I would dice the onion into pretty small pieces, so it doesn’t taste and feel terribly chunky and undone in the mouth.)
  • 1 chopped bell pepper
  • 1-1/2 pints home-canned tomatoes (a 28-ounce can)
  • 1 cup cornmeal
  • ½ cup water (I used the leftover juice from the tomatoes)
  • 1 tablespoon chili powder
  • Garlic powder (I used four cloves fresh garlic, minced)

Instructions:

Mix all together and pour into casserole. Bake at 350 degrees, covered, for 30 minutes. Uncover to brown top.

My comments: It wasn’t done at the end of 30 minutes, so I cooked it an additional 30 minutes, uncovering it for the last 15 minutes. A delicious aroma filled the kitchen for the last half of the cooking. Also, I added ½ teaspoon of good salt, although this probably wasn’t necessary since the canned foods all contain salt.

Before I ate it, I sprinkled on a little bit of nutritional yeast which added a slightly cheesy flavor. It was yummy!
