Are You Searching for Healthy Breakfast Recipes for a Special Weekend Brunch?


Healthy breakfast recipes don't have to be boring and bland.

I really enjoyed making AND eating this low-fat coffee cake; the recipe is in The Rave Diet & Lifestyle Book. Give it a try... you won't be disappointed. And as you can see from the picture below, it does double duty as a somewhat fancy (and definitely yummy) healthy dessert.

Coffee Cake

(Serves 6)

  • 2 cups whole wheat flour
  • 1 cup unsweetened apple juice*
  • 3/4 cup old-fashioned rolled oats
  • 1/2 cup applesauce**
  • 1/2 cup maple syrup
  • 2 tbsp baking powder
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • *I didn't have apple juice, so I diluted a small amount of honey in water.

    **I didn't have applesauce but I put some whole fresh apple in the food processor and processed it to a consistency a little chunkier than store-bought applesauce and it seemed to be just fine in the recipe. You could use a blender to get a creamier consistency than I did.

    Directions for Your Healthy Breakfast Recipe - Coffee Cake:

    Preheat the oven to 350 degrees. Grease a 9" square baking pan with an oil substitute and flour. (I used a smaller square glass pan and used a teensy amount of coconut oil since I didn't have an oil substitute, and then dusted it with whole wheat pastry flour.)

    In a large bowl, add flour, 1/2 cup of oats, baking powder, cinnamon, maple syrup (the real stuff, of course), nutmeg, and ginger. Remove 1/2 cup of the mixture to a cup or small bowl; add the remaining 1/4 cup oats. Cut in 2 tablespoons of applesauce and set the mixture aside.

    Cut the remaining applesauce into the flour mixture in the large bowl. Stir in the apple juice until well combined. Pour the batter mixture into the prepared pan. Top with the reserved oat mixture. Bake for about 40 minutes or until done. (You can test it by sticking in a toothpick. No batter should adhere.)

    Add this to your collection of healthy breakfast recipes. It's delicious for a special breakfast or brunch.

    You can also serve it as a healthy dessert.



    This shows the coffee cake served with a spoonful of coconut ice cream, made with coconut milk (which you can find in your natural foods store) and a sauce I made from fresh strawberries and honey. Simply put a cup of strawberries and a tablespoon or two of honey in the food processor and process for a short time. This is really good!
