Looking for Healthy Dinner Recipes with Big Flavor?
How about healthy dinner recipes that are easy, low in fat and taste good?
I am working my way through the recipes in The Rave Diet & Lifestyle. This is my latest taste test. My comments follow the recipe.

Curried Cauliflower with Peas (spicy)Makes about 6 cups- 1 10-ounce bag frozen peas
- 1 large onion, chopped
- 1 cauliflower, cut or broken into florets (about 4 cups)
- 1/2 cup vegetable broth or water
- 1-2 tbsp Tamari (soy sauce)
- 1 tsp coriander
- 1 tsp whole mustard seed
- 1/2 tsp each: turmeric, cumin
- 1/4 tsp each: cinnamon, ginger, cardamom, cayenne pepper
Instructions: Combine coriander, mustard seed, turmeric, cumin, cinnamon, ginger, cardamom, and cayenne in a large skillet. Heat, stirring constantly, until the spices darken slightly and just begin to smoke—about one minute. Remove from heat and cool slightly. Add the vegetable broth, Tamari and onion. Cook until the onion is soft, stirring occasionally—about five minutes. Stir in cauliflower, then cover and cook over medium heat until tender when pierced with a fork—about five minutes. Stir in the peas and cook until hot—another minute or two. For a less spicy taste, cut back on the cayenne pepper (I used about half of what the recipe called for). Carrots and potatoes are optional. (I added one medium-sized potato and one large carrot. One more potato would have been good.) I served this over brown Basmati rice. It would also be good served with whole wheat chapattis. Comments: I enjoyed this dish but felt something was missing, and I couldn’t put my finger on it, except to think that it might have been better with just a little fat, like olive oil, added. I know that it perhaps defeats the purpose and intent of The Rave Diet, and it might just be that I’m not accustomed to eating certain dishes without there being a little added oil or fat. Or perhaps it just needed to be a little saucier. The flavor of the spices was wonderful, however, and my house smelled delicious for hours. Update on Comments: I heated up leftovers for my next-day's lunch and cheated a bit by adding a very small amount of olive oil and a little more tamari. It really tasted good! I wonder if it was a combination of the flavors blending and mellowing from sitting in the frig overnight, plus the added salt and fat. Your Comments about Healthy Dinner Recipes are Welcome
