Lettuce-Arugula-Apple-Mango Smoothie

A Green Smoothie of Arugula, Romaine Lettuce and Apple

Here's another healthy lunchtime smoothie. I received inspiration for this recipe from Victoria Boutenko's book, Green Smoothie Revolution.

  • Arugula and Romaine lettuce - about 2 to 2-1/2 cups
  • Mango - one (or about a cup of frozen mango, which is what I used)
  • Apple - one
  • Water - one cup

Put all the ingredients in your blender (a high-powered one works best) and blend it all up for a delicious and good-for-you lunch.

I couldn't finish it all during my brief lunch time, so I covered the remainder and refrigerated it. It separated a little but I stirred it and it still tasted good and maintained a vibrant color.


Green Smoothie for Lunch

Spinach-Raspberry-Strawberry-Banana Green Smoothie

For the last couple of weeks I've been enjoying a green smoothie for lunch. I prepare the food in the morning before work, placing the greens in the blender container (which I refrigerate, of course), making sure all of the other food is washed and ready, so I can blend it all up quickly during my short lunch half-hour.

Today's recipe was really tasty. Here are the ingredients:

  • spinach- about 2 cups
  • frozen raspberries - about 3/4 cup
  • frozen strawberries - about 3/4 cup
  • banana - one
  • water - 1 cup

It was delicious, satisfying, healthy and easy to prepare. Enjoy!
