The Best Healthy Pancake Recipe Uses Vegetarian Ingredients


Here’s a healthy pancake recipe sure to please you and your family. It’s based on a recipe from Mike Anderson’s The Rave Diet & Lifestyle book. Try it… you’ll like it!

Old-Fashioned Pancakes

Ingredients:

  • 1 banana – ripe
  • 1 cup milk (non dairy) (I used soy milk; you could use nut milk, too)
  • 1/2 cup whole wheat pastry flour (the recipe called for buckwheat flour, which I didn’t have on hand but would like to try for authenticity. Stay tuned!)
  • 1/2 cup cornmeal (I used a lovely stone-ground, medium grind, organic cornmeal)
  • 2 tablespoons maple syrup (the real stuff, organic)
  • 1 tablespoon vinegar (I used organic, unfiltered apple cider vinegar)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda

Instructions:

Mix together the dry ingredients: flour, cornmeal, baking powder and baking soda.

Healthy Pancake Recipe Cooking Combine in a large bowl the mashed-up banana, maple syrup, vinegar and nondairy milk. To this, add the flour mixture. Stir it just enough to ensure there are no big lumps. If the batter seems too thick, add more milk.

Onto a heated skillet, drop small amounts of batter and cook until your healthy pancakes bubble on the surface. Then turn them over with a spatula and cook on the other side until browned. This will take less time than the first side.

If you don’t have a large enough griddle to cook them all at once (I didn’t!), keep them warm in a low-temperature oven until they’re all cooked. Serve with fresh fruit, applesauce, or maple syrup.

Note: Ideally, to keep this recipe within the Rave Diet guidelines, one would not use any fat or oil in the cooking process. I used my iron skillet with a small amount of coconut oil.

The pancakes still managed to stick quite a bit, although the less-than-perfect result didn’t affect the taste.

Much healthy pancake recipe cooking calls for cooking in a nonstick pan. I struggle with this a little, worrying about the pan surface coatings that are used, so I usually use a tiny to small amount of oil (coconut or olive) when I cook certain things. You can sauté certain foods (veggies) in water or broth, but that would ruin pancakes.

I do have a small nonstick pan by Cuisinart® called GreenGourmet that has a surface made of ceramic rather than petroleum, which certainly sounds like a healthier choice than most. I made a couple of pancakes (the large one in the photo) in this pan and it actually worked quite well and was much easier to remove than the ones cooked in the iron skillet in a little oil.

Healthy Pancake Recipe Serving I really enjoyed these pancakes and will make them again. (At least until I go all raw!... which is always in the back of my mind). The flavor was delicious and I enjoyed the texture which had a slight crunchiness from the cornmeal. The maple syrup recipe ingredient added more sweetness than I usually have in my pancakes, and I didn’t feel a need to smother them in added maple syrup. In fact, I enjoyed the flavor of the basic pancake so much, I didn’t want to add much to the outside of them.

I recommend these vegan pancakes, which are healthy with whole grains and fruit, are a high fiber food, and very delicious. I hope you enjoy them, too.
