This Mango Salsa Recipe is Perfect with Different Types of Food
Here is a mango salsa recipe that you can use to perk up any meal.The other night, just before bed, I noticed the mango in my fruit bowl was ripe and ready to be eaten. Not wanting to eat anything right before going to sleep, I started thinking about recipes for using this luscious fruit. I often use mangoes in green smoothies, but the idea of putting together a salsa dish came to mind. I thought about the ingredients I had on hand and decided to prepare this dish before bed. I didn’t think it would take long, and it didn’t. Just a little chopping and mixing, and I had a beautiful, colorful dish in the refrigerator to be eaten the next day. It’s sweet and spicy, crunchy and smooth, all in one delicious dish. The next morning, I ate it alongside whole grain toast spread with avocado. It was the perfect accompaniment. Ingredients for Mango Salsa Recipe- 1 ripe mango, peeled and chopped into small pieces
- 1 celery stalk, chopped
- 1/2 bell pepper—red or green or orange—chopped
- 1 tomato, chopped
- 1/4 small onion, chopped
- about 1/8 teaspoon salt (good salt, like Celtic or Himalayan)
- 1 teaspoon dried cilantro (I didn’t have fresh, or I’d have used that, increasing the amount, of course… to your taste. Some people don’t like cilantro, so you could use parsley)
- garlic, small clove, chopped
- pinch or more of chili powder
Mix all of the ingredients together in a bowl. Cover and refrigerate to let the flavors mingle and blend nicely. This winter has been especially blustery and cold, and I find myself craving heavier, cooked foods… comfort foods. However, I miss the fresh fruits and vegetables and know I need the nutrients they provide. A dish like this gives a nice balance to a meal of, say, cooked brown rice and beans with some sautéed kale or collards. And it looks just beautiful on the plate.
