New Year's Black-Eyed Peas

A dish of New Year's Black-eyed Peas and Greens:

Some folks believe that eating a dish of black-eyed peas on New Year's will bring luck and prosperity in the upcoming year. I like to believe that! And it can't hurt... it's sure healthy.

Here's a simple recipe that includes greens. You can use mustard greens, turnip greens, Swiss chard, collards, or kale, whatever you like. And then you can serve it all with cornbread, biscuits, or rice. This recipe makes about 6 servings.

Ingredients:

2 tablespoons olive oil
1 pound or so of greens
1 large onion, thinly sliced
1 16-ounce can black-eyed peas, drained
2 tablespoons balsamic or apple-cider vinegar
salt and pepper

Directions:

1. Wash the greens well, of course. Trim and chop coarsely.
2. Heat the oil in a large pot. Add onion and saute until golden brown over medium heat.
3. Add greens, cover the pot, and steam until tender. If you use one of the tougher greens like kale or collards, add a little water to keep everything moist. This may take 5 minutes up to 15 minutes, depending on which greens you use.
4. Stir in the black-eyed peas and vinegar.
5. Season with salt and pepper, and cook until everything is heated through.
6. Serve and enjoy!
