Nut Milk Is a Delicious
Substitute for Cow’s Milk


Nut milk is a healthy and delicious dairy substitute. Are you considering giving up dairy products but wonder what you’ll put on your breakfast cereal every morning?

Some people add juice (apple juice is a good choice) to cereal. This can be tasty and eliminate the need for added sugar because of fruit juice’s inherent sweetness.

But unless you gave up milk a long time ago and you’re accustomed to not eating it, there’s something about that creamy white dairy milk on cereal that may cause you to feel there’s just no substitute for it.

Sure, there’s soy milk, and that can be very tasty. But what if you’re allergic to soy or you just don’t want to consume a lot of it? Well, there’s…. ta da!... nut milk to the rescue!

Almond, Macadamia, Cashew, Walnut

Nut milk, you ask? How do you get milk from nuts? I’ll give you my basic recipe, the one I like the most. You can try it with other nuts, add a pinch of Celtic sea salt, add a date or two for sweetness, a drop of vanilla, whatever strikes your fancy. Here goes…

Basic Cashew Milk

Ingredients:

  • ½ cup raw cashews
  • 2 cups water

Place ingredients in blender and blend until it’s like milk!

Vita-Mix blender This process works the best in a high-powered blender , like Blendtec or Vita-Mix, but it will work in a regular blender. It will just take longer and you may have to strain it. When I make cashew milk in my BlendTec blender, I don’t even have to strain it, and it’s deliciously smooth and creamy… perfect over granola or a bowl of fresh strawberries.

Cashews contain no cholesterol (like cow’s milk) and are a good source of magnesium, phosphorus, manganese, copper, and iron.

Almonds also make a delicious milk. It’s more likely that you’ll need to strain this, though. Some raw foodists will save the solid almond material left over from straining and make biscuits or cookies in the food dehydrator.

Here's a delicious recipe using almond milk and mushrooms. You could serve it for brunch or supper.

Who needs dairy milk?! Certainly not adult humans. Cow’s milk is for baby cows. Even though most of us were indoctrinated to believe that dairy milk is a healthy food and some folks couldn’t imagine life without it, there are nutritious and readily available nondairy substitutes.
