Every recipe I’ve tried from the book has been delicious and easy. Here’s one for you to try: Vegan Sloppy Joes- 1 16-ounce can tomato sauce*
- 1-1/2 cups boiling water
- 1-1/2 cups dry texturized vegetable protein (TVP)**
- 1 cup coarsely chopped onions
- 2 tablespoons vegetable broth
- 2 medium bell peppers, coarsely chopped (I used one large bell pepper)
- 1 tablespoon chili powder (more to taste)
- 1 teaspoon dried mustard
Instructions: Heat the broth and sauté the onions and pepper for five minutes. Add the remaining ingredients and simmer for 20 minutes. Serve over hamburger rolls. My modifications: *I didn’t have a 16-ounce can of tomato sauce, so I improvised by using an 8-ounce can of tomato sauce, about 1/4 cup of tomato paste, and about 1/2 cup of water. **I never buy TVP, so I didn’t have any on hand. What I did have was a 16-ounce container of tofu in my freezer. I thawed that out and crumbled it up. Because I didn’t need all of the water called for (TVP requires reconstituting), I just used the small amount mentioned above (about 1/2 cup). You can easily add water to reach the consistency you prefer. The recipe didn’t call for it, but I added a couple of large spoonfuls of a vegan, nonfat barbecue sauce. I think it gave it a nice little kick. I served this over a hearty whole-grain bread, with some good dill pickles sliced on the side, and it was really yummy.
