Salsa to Improve the Flavor of Canned Lentil Soup

In the winter when it's cold and gray, one of my favorite comfort foods is soup. Sometimes I want it immediately, though there's nothing homemade available. As much as I want to be good all of the time--ha ha--and prepare my foods from scratch, I know there will be days when I'm tempted to eat something not so good. So I usually have a couple of cans of vegetarian soup in the pantry. It may not be ideal, but it's better than running out to a restaurant.

One of my favorite soups is Amy's Lentil Vegetable, the low-sodium version. I heated up a can of it today for my lunch. As I started to eat I thought it needed something to spiff up the flavor. I thought about sprinkling on a few drops of tamari, but that would counteract the low-sodium quality. Then it occurred to me: salsa! I put a spoonful of salsa on top and it was delicious, a perfect accompaniment.
